GRANNY'S CHOCOLATE MALLOW CAKE



GRANNY'S CHOCOLATE MALLOW CAKE
Sift 1 1/2 cups of flour and measure back into sifter.   Add 3 tsps. baking powder, 3/4 tsp. salt, and 3/4 tsp. soda into flour.  Sift together with flour 3 times.
Cream 2/3 cup shortening or 1 1/2 sticks butter and 1 1/2 cups sugar together.
Add 2 eggs unbeaten one at a time, beat well after each addition.
Add 6 tblsps. Hershey's cocoa and beat.
Beat in flour in two parts adding 1/3 cup thick sour milk (or 1 tsp. vinegar with sweet milk)  Then add 3/4 cup hot water and 1 tsp. vanilla.   Mix
Bake at 350F until a toothpick stuck in the middle comes out clean.
 
 
 

FUDGE FROSTING...FOR CAKE

Combine 4 tblsp. cocoa and 1 1/2 cup sugar .... mix well
Add 7 tblsp. milk, 2 tblsp. butter, 1 tblsp. Karo syrup
Cook over low heat stirring frequently until mixture reaches soft ball stage or 240F on a candy thermometer.  Remove from heat.
Quickly add: 2 tblsp. butter, 1 tsp. vanilla, 1/4 cup marshmallows, 1 cup pecans or walnuts (optional)
Pour frosting over cake quickly while it is hot.   Otherwise it will harden in the pan and not on the cake.
(This icing should be like fudge.)
OK FOLKS, I DON'T KNOW HOW YOU COULD MAKE THIS ONE LOW FAT?  THIS IS A RECIPE THAT HAS BEEN IN MY FAMILY FOR A LONG TIME!  VERY, VERY CHOCOLATY AND SWEET.  DON'T MAKE THIS ONE IF YOU ARE AFRAID OF CALORIES!   NOTE:  I MADE TWO BATCHES OF THIS FOR A CHURCH SOCIAL...SMALL CHURCH...AND PEOPLE WERE FIGHTING FOR A SECOND SERVING!  GO FIGURE THE FROSTING DIDN'T EVEN HARDEN LIKE IT WAS SUPPOSED TO!  THEY LOVED IT!  HAHA
